The color of culinary argan oil and its smell determine its quality. A brown color and a smell of strong grilling are a sign of very heated argan oil hence, the quality is less.
Culinary argan oil is known for its nutritional & health benefits, rich in vitamin E, A and of oleic-linoleic type, this oil contains 80% of unsaturated essential fatty acids, just like olive oil. But it has a clear precedence which is its richness with linoleic acid (37%). This acid is said to be important because it cannot be synthesized by the body and must be provided by nutrition. Its oleic acid content makes this oil very interesting for regulating cholesterol and the risks of hypertension. It contains anti-carcinogenic elements that helps fight against obesity and it has a beneficial effect on the liver. For berber people, it is normally eaten with bread or used for seasoning. It is excellent for health, consumed raw as an extra oil in many recipes in order to flavor salads, vegetables or cereal dishes, also to season eggs, couscous and tajin, and in desserts such as amlou ( a spread made of toasted almonds, honey & argan oil)
